Respect Your Food

So what would you change about this rack I cut tonight? Keep in mind this is Shetland lamb, SonCroft Prime Lamb (tm) no less, and because of the breed, they have a higher spinal process which equates to a more elliptical loin-eye muscle shape.
Here is a challenge for the conventional producer-finisher-processor-consumer model with the modern industrial breeds...
1) Get this kind of finish, without the waste of backfat.
2) Get this kind of finish on grass hay.
3) Get this kind of flavor, texture, juiciness and consistent quality.
